The story

How this dish came to be.

Born on the same iron tawas as pav bhaji — the story goes that a Bombay street cook tossed cooked basmati into last night's bhaji masala and never looked back. We age basmati for 18 months, cook it separately, and marry it on a hot tawa with sautéed carrots, beans, peas and capsicum, plus our house pav-bhaji spice. Freeze-dried while the grains are still separate and glossy.

Chef's note

Squeeze half a lemon over the top and eat it straight out of the bowl — no plate, that's the vibe.
