The story

How this dish came to be.

Kabuli chickpeas soaked overnight, then simmered with a black tea bundle — the old Amritsari trick that gives chole its inky depth. Whole spices are dry-roasted and hand-ground the same morning. Anardana, kasuri methi and a pinch of amchur bring the tang. What you get after 3 minutes with hot water is the same bowl you'd chase down at a Punjab dhaba after a long drive.

Chef's note

Finish with a squeeze of lemon and a raw onion ring — it's not a garnish, it's the sixth ingredient.
