The story

How this dish came to be.

Dal Makhani was born in the smoky kitchens of Old Delhi in the 1950s — a dish that refused to be rushed. We honour that tradition. Whole urad and a scatter of rajma are soaked overnight, slow-simmered for eight quiet hours with tomato, ginger and a slow-toasted garam masala, then finished with a hush of white butter and cream. The freeze-drying happens at the exact moment the dal turns from good to unforgettable — locking in the depth without a single preservative.
